Hop Tart was quite drinkable, but lacked a certain something. I think no hopping in the early boil led to a lack of bitterness. I didn't want it too bitter, but I felt that the complete absence of bitterness made the beer lack character. It did, however, have a wonderful hoppy aroma, which I attribute to the dry hopping.
I wanted to improve this recipe, by adding some early bittering hops and also by mashing at a lower temperature. I have been advised that my usual mashing temp of ~69 C is too high. So to Spring Folly, brewed on 28 April and based on the Hop Tart recipe, which is based on Steve Wilcox's rendition of Brewdog's Trashy Blonde.
Grain Bill
147g low colour crystal malt
258g Aromatic malt
200g wheat malt
3407g pale malt
80g brown malt
Strike temp 69C, mashed for 90 mins, final mash temp 60C. Water pre boiled, fly sparged. 5g of CaSO4 added to mash, 1g MgSO4 likewise.
Hopping
20g Fuggles added at 90 mins
17g Columbus at 30 mins
30g Cascade at 10 mins (+ 4g Irish moss)
40g Citra steeped for 1 hour from 80C
Force cooled and aerated. Yeast safale 04 (hydrated). OG 1045
This has nearly finished fermenting and will be transferred to the pressure barrel in a couple of days.
